Felipe Valls Sr. opened Versailles in Miami’s Little Havana,
fulfilling his vision to create a Cuban hub—a place where friends
and families could get together to enjoy high quality food at affordable
prices. The restaurant’s success still hinges on this
premise.


The
Versailles Restaurant Cookbook
features some of the most beloved
recipes from this Miami institution, including fried yuca, vaca
frita
(shredded beef with onions), lechón asado (roast
pork), ropa vieja (shredded beef in tomato sauce), guava pie,
and, of course, the one, the only, the original Cuban sandwich. The
simplicity of Cuban cuisine makes it surprisingly easy to prepare these
bold and savory dishes for which the restaurant is renowned.

Ask
the die-hard patrons of Versailles why it is their favorite restaurant
for breakfast, lunch, dinner, or even a post-party snack at 2 a.m., and
they’ll tell you they keep coming back for the tortilla
(potato omelet), the plantain chips with mojo, the croquettes,
the moros (mixed black beans and rice), and the rabo

whenever a pastry crust is required for something like an empanada
When I heard that Versailles Restaurant, the de facto epicenter of Cuban Cuisine & Culture in South Florida was publishing a cookbook of its famous, home-style recipes, I admit that I became a little giddy. I live about 20 minutes away from Versailles. With traffic. In the 40+ years that I’ve lived in South Florida, I’ve lost track of how many times I’ve indulged myself in, and dragged out of town visitors to Versailles. You want a taste of the real Miami? Skip South Beach – trek to Little Havana and Calle Ocho!

Which is not to say that I didn’t have one major bone to pick with the cookbook. While there are many classic and famous desserts represented, there is not a single pastry recipe in the entire book. In fact, whenever a pastry crust is required for something like an empanada, you are instructed to purchase refrigerated pie dough. The caption under the photograph for the Santiago-Style Chicken Pie on Page 37 explains it: “This recipe is a little different… in that it uses refrigerated pie crust. The pastry made at the bakery is too labor intensive to include here...” [emphasis added by me]. Personally, I find that statement to be a bit disingenuous and condescending. It assumes that the reader is either too lazy or incapable of making a pastry crust. Perhaps it’s a secret recipe. That’s fine, but my feeling is, either give us the complete recipe, or don’t include it in the book and insult the reader/cook simultaneously.

Overall, I prepared at least 6 or 7 recipes from the cookbook, and while (for my own personal taste) I might cut back a bit on the oil and salt, I was very happy with the results. I found the instructions clear and logical. Before long, I had a taste of Versailles coming out of my own kitchen!

Reminds you of the food at Versailles.
Not a bad cookbook on Cuban food, especially for a beginner or someone who has only tried it in restaurants. I have tried some recipes and, while not as good as those handed down by family with a more homey touch or personal touches, it is fairly representative of what you eat in restaurants in general and Versailles in particular.

For something less commercial, something more like what you would eat at the home of a Cuban family (especially if the hostess is a good cook) I highly recommend "The Cuban Table."

Have to wait for improvements.
I: received the book and tried my first recipe: the stuffed peppers, and was disappointed.
I am from Cuba and should know how to cook stuffed peppers, but I like to follow instructions to the T, and this book, at least with this recipe, is confusing..
The book shouldn't be about the wonderful experience at Versaiiles, when I go there I know I can count on them to have a great time, but about how to cook right.
There were no oven-frying pan clear instructions, or temperatures. Was not clear whether the meat was supposed to be cooked first or not, or though I think it was supposed to be afterwards. You probably needed more pages to describe this food and I am not even working on the rest of the book yet.
It cost me a big fight with my Cuban wife. Ohhhhhhh.
On the other hand, it is a good effort to bring Cuban cuisine to America. Good beginning, but try to start from not knowing before hand how to cook Cuban food and you will succeed. Waiting for improvements.

I love this cookbook
I love this cookbook. I live in NJ and only get the privilege of eating at Versailles two to three times a year when visiting my family. I have tried many of the recipes in the cookbook and they are fantastic. Try the Arroz Imperial recipe, it sounds like a bizarre recipe, but it is absolutely delicious. A+++ cookbook!

Great Book
I purchased this book for my mom. I bought mine at Versailles Restaurant in Miami, I love the simplicity of the recipes and the taste is just like being at the famous Versailles Restaurant in Maimi,

Havana will never be the same, but it's food can be.
OK, it's not exactly like mama used to make, but I love this Restaurant so much that I had to have their recipes...just in case. Besides I live in Dallas and Miami is quite a hike for authentic Cuban.

Practical cookbook
love this restaurant but no longer live in Miami. Love the recipes in this cookbook so now I can have some of the dishes at home. Noe of the recipes are difficult and all the ingredients can be gotten local, so the cookbook is very practical.

Excellent Cuban cookbook. This restaurant has been around for decades. They have several Versailles restaurants throughout Miami. Excellent recipes.

Excellent Restaurant
Ingredients are accurate, preparation instructions aren't ......so confusing and out of sequence....
The restaurant is dear to the Cubans hearts, when you visit Miami you need to eat there...is like visiting
Family. Just tried Chicken and Yellow rice..page 85 , this is a keeper!!!

Authentic beautiful Cookbook
A beautiful written book by a respectable family that left Cuba and were successful in the US - I love the restaurant- my family’s favorite in Miami- my Mama was the best Cuban cook from the Cuban eastern province of Oriente and she loved their food.
